Spinach Bacon Egg Casserole



Happy Labor Day weekend everyone! I made this casserole two days ago, and I had to share it. I have always been a breakfast person.  I need to eat as soon as I get up, so that I can enjoy my cup of coffee afterwards. With school starting this week, I needed a meal that I could quickly heat up before I went to work. I decided to try a new recipe for an egg casserole. This one has bacon (which I fell in love with again after visiting the Bacon Bar in NYC) and spinach. It turned out to be very tasty. 

I did make a few changes: (1) I used Cheddar Cheese instead of Asiago and Monterey Jack cheeses; (2) instead of whole milk, I used 2%; and (3) I did added plum tomatoes instead of peppers and onions. Enjoy!

My Bluish Sky…

My bluish sky is always there even behind my clouds. It just depends on the filter my eyes are using that day. I have filters that drift from gray to transparent. My summer filter has been off setting my skies to a light steel blue. I am thankful that I still see some blue. There is always a blue sky. Like you, I am just waiting for my filter to turn transparent again. T. Lanette
