Even though they are gluten-free, I had not business bringing these Double Chocolate Chip Cookies into my home yesterday. You can probably guess how this ended. Don’t let the gluten-free fool you. These are some dangerous cookies to have in your house!

Spinach Bacon Egg Casserole



Happy Labor Day weekend everyone! I made this casserole two days ago, and I had to share it. I have always been a breakfast person.  I need to eat as soon as I get up, so that I can enjoy my cup of coffee afterwards. With school starting this week, I needed a meal that I could quickly heat up before I went to work. I decided to try a new recipe for an egg casserole. This one has bacon (which I fell in love with again after visiting the Bacon Bar in NYC) and spinach. It turned out to be very tasty. 

I did make a few changes: (1) I used Cheddar Cheese instead of Asiago and Monterey Jack cheeses; (2) instead of whole milk, I used 2%; and (3) I did added plum tomatoes instead of peppers and onions. Enjoy!

This pattern, a Victorian Lattice Square, was easy to do and perfect to use with some leftover yarn. My goal is to have enough to make a blanket for the cat carrier.  Next blanket will be for my room.
