This was the heaven I needed this week! It’s only Monday, and everything just popped off: Weather going from single digits to 60 degrees Fahrenheit in a few days; meetings back to back in the middle of my teaching schedule; and my Mac Air (2012) charger failing (a-freaking-gain) costing another $80+. I needed something more than my Prosecco. This was it! I love Reese’s Peanut Butter Cups. So, when I saw Two Sleevers’s recipe, I had to try it.

Happy Labor Day weekend everyone! I made this casserole two days ago, and I had to share it. I have always been a breakfast person.  I need to eat as soon as I get up, so that I can enjoy my cup of coffee afterwards. With school starting this week, I needed a meal that I could quickly heat up before I went to work. I decided to try a new recipe for an egg casserole. This one has bacon (which I fell in love with again after visiting the Bacon Bar in NYC) and spinach. It turned out to be very tasty. 

I did make a few changes: (1) I used Cheddar Cheese instead of Asiago and Monterey Jack cheeses; (2) instead of whole milk, I used 2%; and (3) I did added plum tomatoes instead of peppers and onions. Enjoy!
