Black-Eyed Peas: My Old Favorite

I decided today would be perfect for making black-eye peas. I know it’s tradition to make them and collard greens for New Year’s Day. However, I got caught up in relaxing and here we are. 🤷🏾‍♀️ So today with my sous-chef Mozeley, I brought some “Good Luck” into my house.

Spinach Bacon Egg Casserole



Happy Labor Day weekend everyone! I made this casserole two days ago, and I had to share it. I have always been a breakfast person.  I need to eat as soon as I get up, so that I can enjoy my cup of coffee afterwards. With school starting this week, I needed a meal that I could quickly heat up before I went to work. I decided to try a new recipe for an egg casserole. This one has bacon (which I fell in love with again after visiting the Bacon Bar in NYC) and spinach. It turned out to be very tasty. 

I did make a few changes: (1) I used Cheddar Cheese instead of Asiago and Monterey Jack cheeses; (2) instead of whole milk, I used 2%; and (3) I did added plum tomatoes instead of peppers and onions. Enjoy!
